This delicious vinegar is made from the juice of freshly harvested white trebbiano grapes.  The juice is boiled down to create a concentrate, which is also called a “must”.  The must is then fermented over many years with a slow aging process, in which it is kept in progressively smaller barrels made of woods such as juniper, chestnut, mulberry and oak.  After 12 or 18 years, depending on the desired age of the product, the vinegar is withdrawn and bottled in glass as a dark brown, sweet and tangy, thick vinegar.

There are a few different varieties of balsamic vinegar. The traditional balsamic vinegar of Modena must be produced in Modena, Italy from Modena trebbiano grapes that are harvested as late as possible.  The making of this specific balsamic vinegar follows the 12-18 year fermenting process very strictly, and the final product is examined by a panel of tasting judges.  Traditional balsamic vinegar of Reggio Emilia is similar to its Modena counterpart, but it is made in the Reggio Emilia region of Italy with native grapes.  Finally, in the United States, most commercial balsamic vinegar is made very economically, with wine vinegar blended with the grape must and a short aging period.

In addition to traditional balsamic vinegar, there is also premium white balsamic vinegar.  This vinegar is made by blending white grape must with white wine vinegar and cooking the combination at lower temperatures to prevent darkening. This vinegar has a clean aftertaste, and is most often used for appearance purposes, in sauces and dressings that stay light in color.
